4 cups diced seedless watermelon

2 cups diced melon (such as honeydew or cantaloupe)

2 cups diced cucumber

1/4 cup finely sliced shallots

1/4 cup chopped fresh mint

1/4 cup roasted peanuts, crushed

1 tsp toasted sesame oil

2 tbsp Original Coconut Aminos

2 tbsp freshly squeezed lime juice

1 tsp maple syrup or honey

1/2 teaspoon red pepper flakes (optional)


  1. 1. In a large bowl, combine the diced watermelon, melon, cucumber, shallots, mint, and peanuts.
  2. 2.  In a small bowl, whisk together the sesame oil, coconut aminos, lime juice, maple syrup or honey, and red pepper flakes (if using).
  3. 3.  Drizzle the dressing over the fruit and toss gently to combine.
  4. 4.  Serve immediately. Enjoy!
