Pumpkin Spice Overnight Oats with Magic Shell

Celebrate autumn with this delicious, healthy, and flavor-packed overnight oats recipe. We blended flavors like pumpkin spice and pumpkin puree with oats, Greek yogurt, maple syrup and chia seed to create a recipe perfect for fall. Top the overnight oats with a chocolate "magic shell" made with coconut oil for a sweet addition to your morning breakfast or afternoon snack.

 

 

Ingredients


1/2 cup milk of choice, such as almond or oat

1/4 cup Greek yogurt or a plant-based alternative

1/4 cup pumpkin puree

1 Tbsp maple syrup

1/2 tsp vanilla extract

1 tsp Nutiva Organic Chia Seeds

1/2 cup quick-cooking oats

1/2  tsp pumpkin spice

1 Tbsp dark chocolate chips

1 tsp Nutiva Organic All-Purpose Coconut Oil

 

Directions:

  1. In a medium-sized bowl or jar, mix together the milk, Greek yogurt, pumpkin puree, maple syrup, and vanilla extract. Stir until smooth and fully combined.
  2. Add the chia seeds, oats and pumpkin spice to the mixture. Stir again, ensuring the oats are evenly coated.
  3. Cover the bowl or jar and refrigerate for at least 4 hours, or preferably overnight, allowing the oats to soak and soften.
  4. Before serving, prepare the magic shell. In a small microwave-safe bowl, combine the dark chocolate chips and refined coconut oil.
  5. Microwave the chocolate-coconut oil mixture in 15-20 second intervals, stirring between each interval until the chocolate is completely melted and smooth. Drizzle it over the top of your overnight oats to form a thin layer.
  6. Place the overnight oats in the fridge or freezer for a few minutes for the chocolate to harden and form a magic shell. Break it with a spoon, and enjoy your pumpkin spice overnight oats with a delicious, crunchy topping!
