Thanks to @brodeurelizabeth & @salt.tribe for giving me the idea to add a couple dates to my grain free granola bar recipe- it helped them stay together so much better & this whole recipe is sweetened with only 3 dates- so the sugar is extremely low per serving!? . It also has collagen (super healing to the gut!) & lots of fibre & healthy fats so you will feel full for hours? . Recipe posted ? & please let me know if you make them! ☺ . Grain Free Collagen Choc Chip Granola Bars? 3/4 cup unsweetened shredded coconut 2/3 cup pecans 1/2 cup almond flour (I like @bobsredmill superfine almond flour) 1/4 cup pumpkin seeds 1/4 sesame seeds 2 tsp baking powder 1/4 tsp pink salt 1/4 cup coconut butter (@nutiva is what I use!) 2 Tbs cashew butter (or nut butter or choice) 1 tsp psyllium husk powder (optional) 2 tsp vanilla extract 1/4 cup collagen (@furtherfood , @vitalproteins & @bulletproof are all great brands!) 3 Tbs ghee, butter, or coconut oil (melted)- @fourthandheart & @stfrancisherbfarm is my fave ghee! 1 1/2 tsp cinnamon Dash of nutmeg 1/2 cup of dark chocolate or sugar free chocolate chips (plus a few more to sprinkle on top)- I love @lilys_sweets_chocolate 3 dates, pitted 1/4 cup water . . Directions. . -Preheat oven to 350 C -Put 3 dates in a small saucepan over medium/high heat with 1/4 cup of water -allow the mixture to heat up and mash the dates with a fork & allow the liquid to become absorbed to form a thick ‘paste’ -remove from heat and set aside -pulse pecans in a blender until a ‘crumb’ texture forms -mix the pecan crumbs and dry ingredients together in a mixing bow -add the rest of the ingredients and gently incorporate until a sticky dough has formed -grease a square pan with ghee, butter or coconut oil (or parchment paper) and spread batter evenly onto the pan (make sure to push down firmly as this will help the bars stick together once they have been cooked) -bake for about 12-17 minutes (watch carefully as you don’t want to over bake) until top is lightly browned -remove from oven and allow to cook completely before cutting into bars -serve by itself or top with almond butter or coconut butter or however you’d like & enjoy! . #foodblogfeed

For these three ‘toasts’ all I did was cut a sweet potato into slices & pop them in the toaster until they were soft when pierced with a fork? || for the first one I just topped it with avocado slices & fresh pepper-super simple and easy but you could also add some salsa or any other toppings for some extra flavour! || the second one is topped with @nutiva coconut butter & homemade blueberry jam & a cashew butter drizzle || & for the last one I topped it with almond butter and fresh blueberries (cinnamon would also be delicious with this combo)!? . Recipe below ??If you don’t have popsicle molds, freeze in little freezer-safe cups with a spoon stuck in there OR freeze to make a n’ice cream OR just enjoy straight out of the blender as a pudding. #options #howisummer . RECIPE: . In a blender, combine: . 1 ripe avocado 1 cup coconut milk / milk of your choice 1/4 cup raw cacao powder 2 tbsp maple syrup (add more for a sweeter, less intensely chocolate-y pop) 2 tsp vanilla extract 1/4 tsp pink himalayan salt 1/4 tsp cinnamon . Blend until smooth and creamy. Pour mixture into popsicle molds, freeze for at least 6 hours and enjoy! My first attempt at energy balls loaded with healthy fats! Not really into calling them fat balls ? Let’s go with fat BOMBS. Almond butter cacao fat bombs, that is ? ———————— 1 cup almonds, 2 dates, cacao powder all processed in a food processor. Then add 1/4 cup melted coconut manna and 1/4 cup almond butter and process again. Roll into balls and freeze for a few hours, then transfer to fridge. Just one of these kept me full for hours! It’s amazing what a healthy relationship with fat can do for your mind and body ?

Who else thinks Sunday Brunch is by far the best meal of the week? ??This vanilla butternut blueberry French toast has been in my mind for a long time. Today it happened in real life. And it after it came out of my mind, it literally blew my mind. SO GOOD.?plus I added all the power of @furtherfood Collagen to keep my hair and nail and skin game strong ??? And this French toast has a full serving of veggies = a win in my book ? Recipe below. . Side note: I eat dairy/gluten free throughout the week to keep inflammation low (for a lot of reasons but especially hormonal health!) but on the weekend I usually have a meal or two with it for fun. This used coconut milk so it’s dairy free but there is definitely gluten in the @traderjoes bread, but at least it was organic and sprouted ? . Soak slice of bread in a mix of egg and coconut milk seasoned with @wildfoodsco Vanilla bean powder, @herbaffair Ceylon cinnamon, pinch of pink salt, Penzeys pumpkin pie spice and a scoop of @furtherfood Collagen (discount code in comments). (For 2 people I did 4 pieces of bread, 2 eggs and about 2/3 c coconut milk). Cook on a skillet till perfectly toasty! . For explodey bloobs, just heat blueberries frozen or fresh in a small pot till liquidy. For butternut squash, coat cubes in coconut oil and @fourthandheart Vanilla bean ghee. Season with salt, cinnamon and vanilla powder. Roast at 400 for about 25 min. . Assemble your French toast and drizzle with @nutiva Coconut butter / manna, which is very appropriately named considering it tastes like heaven ? . And what do you get? Amazing French toast with ZERO added sugar, and yet SO MUCH flavor! But if you like it on the sweet side, add a little maple syrup. But I didn’t think it needed it ?? . Paleo/Whole30: use a paleo bread like @barelybread. But if you’re strict Whole30 with no paleo creations… then sorry I can’t help you ?except by saying add this to your post-Whole30 menu immediately. ?
