Oatmeal Hemp Cookies

Instructions

  1. Combine the Nutiva Organic Extra-Virgin Coconut Oil and sugar together. Add the egg and vanilla to the creamed mixture.
  2. Combine in seperate bowl the flour, baking soda, oats and the Nutiva Hemp Seeds.
  3. Add dry mix into wet mixture. Grease cookie sheet and bake 350 degees for 12-15 minutes.

    I was hesitant to make these as there aren’t any suggestions or comments. I modified the recipe and used 1/2 cup hemp seeds and 1/4 cup flax meal. I also used Nutiva shortening, because even in the air-conditioned house, I don’t think the cookies would have solidified. Lastly, I added 1/4 cup of organic dried cranberries and used 3/4 cup of raw sugar. Yield is one pan? I made mine large and baked them on parchment paper and for 2 mins longer and let them sit in the turned off hot oven for another 10 mins. I got 15 crunchy and chewy delights!
    Warning:This recipe with hemp seeds will result in a seed like crunchiness 🙂
