Baked Apple Stuffed Crumble

This apple is stuffed with superfoods like: coconut oil, hempseed, and chia seed… But wait, there’s more! Our secret crumble ingredient is O’Coconut. You’ll never view a baked apple stuffed crumble the same again.

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a large baking dish with tinfoil. Pour in ½ cup water.
  3. Wash apples and cut off the apple tops to about ¼ way down (you want a large enough opening for the crumble to fit). Remove as much of the core and seeds as possible without cutting through to the bottom.
  4. Set apples on tinfoil, and bake for 15 minutes.
  5. Meanwhile, prepare the crumble by placing the rest of the ingredients in a blender. Blend to a crumbled consistency (scraping down sides as needed).
  6. Transfer crumble to a bowl and set aside.
  7. Once the apples are done, remove from oven, add ¼ cup more water to the bottom of pan. Then, stuff each apple with the crumble.
  8. Bake for another 15-18 minutes. Serve warm.

    What could you use instead of the bars? I don’t want to buy them at this point. I buy enough things already.

      Hi Marianne – you could simply just use some shredded coconut if you don’t want to use the O’Coconut. We have not tried the recipe like this, so we can’t be 100% certain on the results. Good luck!

    Does heating hempseed to such high temperatures harm the good fats?

      Hi – Great question! To preserve the delicate fats and essential fatty acids, it is optimal to consume hempseeds raw. While medium heat cooking will have an effect on the nutrient density of hempseeds, it’s not so significant that we recommend avoiding it entirely. You can bake or heat hempseeds and still retain most of the nutritional benefits. Hemp Oil, however should always be used raw or below 300°F.
