Chocolate Coconut Chia Pudding

A tropical take on a classic chocolate treat, this pudding is made with Nutiva Coconut Sugar and Chia Seeds. It’s a perfect snack for any time of day.

Instructions

  1. Blend coconut milk, coconut sugar, cocoa powder and vanilla extract until smooth.
  2. Stir in chia seeds.
  3. Pour into 4 glasses, ball jars or bowls.
  4. Let set in fridge for 2 hours.
  5. Garnish with coconut flakes or chocolate shavings and serve.

    Does the taste dramatically change if u use sweet coconut milk, or maybe almond coconut milk

      Hi Samantha – yes, it will definitely change some depending on the type of milk you use, but if you use any kind of “chocolate” and/or “coconut” milk, it won’t change much since that’s the base flavor to the recipe. Hope that helps. Enjoy!

    by coconut milk, do you mean like Silk Coconut Milk? or the canned coconut milk?

      It may not gel in the same way, we haven’t tried it. If you try using ground chia please let us know how it turns out. Good luck!

    I suspect a typo in this recipe. 1tbsp. of vanilla extract per batch seems excessive.. I just made 4 times this recipe and only used 1tbsp vanilla extract. Tastes spot on. I think it should read 1tsp. vanilla extract? I also added 1tbsp. instant coffee. Tasted delicious! Chilling now. I can’t wait to taste the final product. Thanks
