- Preheat oven to 350°F.
- Grease and line a loaf pan with parchment on the bottom.
- Place dry ingredients in a bowl, sifting the coconut flour. Set aside.
- Beat the eggs, honey/coconut sugar, coconut oil and banana until well blended.
- Add zucchini and mix for 15 seconds.
- Slowly add the dry ingredients to wet ingredients and blend.
- Spoon batter into loaf pan and bake for 40-45 minutes until center is cooked.
