Red Palm Oil Basted Turkey

Basting the turkey with red palm oil delivers delicious flavors and beautiful hues, so be sure to carve this show-stopping roast turkey at the table.


  • 1 (12 to 14 lb) turkey
  • 1/2 cup Organic Red Palm Oil
  • 2 tbsp chopped fresh sage + 5 sprigs
  • 1 tbsp chopped fresh thyme + 3 sprigs
  • 1 tbsp chopped fresh rosemary + 3 sprigs
  • 2 tsp salt
  • 1 tsp freshly ground pepper
  • 1 onion, chopped
  • 1 large carrot, chopped
  • 1 stalk celery, chopped
  • 6 cloves garlic
  • 1 cup white wine
  • 2 cups low-sodium chicken or turkey broth
  • 1 tbsp cornstarch


  1. Preheat oven to 325°F. Pat turkey dry with paper towel. Combine 2 tbsp of the palm oil, chopped sage, thyme, rosemary, salt and pepper; rub all over turkey, including inside cavity and under skin of breast. Fill cavity with 4 sprigs sage, 2 sprigs thyme and 2 sprigs rosemary. Tie legs together with butcher’s twine and tuck in wing tips underneath turkey.
  2. Add onion, carrot, celery and garlic to roasting pan. Place turkey breast side up in roasting pan fitted with rack. Cover with foil.
  3. Roast turkey, basting every 45 minutes with 2 tbsp of the remaining palm oil, for 2 1/2 hours. Remove foil; cook for 1 to 1 1/2 hours or until meat thermometer inserted into thickest part of inner thigh without touching bone registers 185°F.
  4. Transfer turkey to serving platter; remove butcher’s twine and herbs from cavity, discarding herbs. Tent loosely with foil for 30 minutes.
  5. Meanwhile, set roasting pan with roasted vegetables over medium heat; stir in wine, broth and remaining herb sprigs. Bring to boil, scraping up brown bits from bottom of pan. Reduce to simmer; cook, stirring occasionally, for about 20 minutes or until fragrant and flavorful.
  6. Whisk cornstarch with ¼ cup (60 mL) water until blended; stir into gravy and return to boil; cook for 1 or 2 minutes or until gravy starts to thicken.
  7. Strain gravy and serve with turkey.
