Nutty Protein Tarts
Mini tarts that are packed full of protein and flavor.
- 2/3 cup + 4 tbsp Nutiva Organic Virgin Coconut Oil (divided) Organic Virgin Coconut Oil
- 1/4 cup Nutiva Organic Coconut Flour Organic Coconut Flour
- 1/2 cup Pecans (finely chopped)
- 6 tbsp Nutiva Organic Coconut Sugar (divided) Organic Coconut Sugar
- 1/4 Cup + 1 tbsp Nutiva Organic Hempshake - Chocolate (divided) Organic Hemp Protein
- Preheat oven to 350
- In a food processor pulse together 4 TBS coconut oil, coconut flour, 2 TBS coconut sugar and chopped pecans until well mixed.
- Press the mixture into a mini muffin pan (24 total mini muffins) approx 3/4 TBS into each mini muffin. Be sure to press down firmly.
- Bake for 5 minutes
- As the tart base cools, get a double boiler ready. In the double boiler add the remaining coconut oil.
- Once the coconut oil is melted add remaining coconut sugar stir until dissolved.
- Stir in the Hempshake powder, once the powder is dissolved remove from heat.
- Pour hempshake mixture over tart bases.
- Freeze until solid. Store in an airtight container in the freezer.
