Nutty Protein Tarts

Mini tarts that are packed full of protein and flavor.



  1. Preheat oven to 350
  2. In a food processor pulse together 4 TBS coconut oil, coconut flour, 2 TBS coconut sugar and chopped pecans until well mixed.
  3. Press the mixture into a mini muffin pan (24 total mini muffins) approx 3/4 TBS into each mini muffin. Be sure to press down firmly.
  4. Bake for 5 minutes
  5. As the tart base cools, get a double boiler ready. In the double boiler add the remaining coconut oil.
  6. Once the coconut oil is melted add remaining coconut sugar stir until dissolved.
  7. Stir in the Hempshake powder, once the powder is dissolved remove from heat.
  8. Pour hempshake mixture over tart bases.
  9. Freeze until solid. Store in an airtight container in the freezer.

    Just wondering…..
    6 tbsp Nutiva Organic Coconut (divided) Should this line be Coconut Sugar?
    ┬╝ Cup + 1 tbsp Nutiva Organic Hempshake – Chocolate (divided) Why is this divided? Is the 1 TBS mixed with the flour and nuts for the base?
