Mocha Chia Pudding

A chocolatey chia pudding with a kick of coffee, this treat is sure to give a boost to your day!

Ingredients

  • 3/4 cup Coffee (double brewed espresso beans, chilled)
  • 3/4 cup Coconut Milk
  • 1 tbsp Cocoa Powder
  • 3 tbsp Nutiva Organic Coconut Sugar Organic Coconut Sugar
  • 1/2 tsp Vanilla Extract
  • dash Sea Salt
  • 1/3 cup Nutiva Organic Chia Seed Organic Chia Seed
  • dash Cinnamon (optional)

Instructions

  1. Place coffee, coconut milk, cocoa powder, maple syrup, vanilla and salt in a blender and mix thoroughly.
  2. Add chia seeds and blend on low speed for 2 minutes.
  3. Pour into containers and chill in refrigerator over night.
  4. Top with raw cacao nibs, fresh blue berries or strawberries or eat it just as is.
