Mocha Chia Pudding
A chocolatey chia pudding with a kick of coffee, this treat is sure to give a boost to your day!
Ingredients
- 3/4 cup Coffee (double brewed espresso beans, chilled)
- 3/4 cup Coconut Milk
- 1 tbsp Cocoa Powder
- 3 tbsp Nutiva Organic Coconut Sugar Organic Coconut Sugar
- 1/2 tsp Vanilla Extract
- dash Sea Salt
- 1/3 cup Nutiva Organic Chia Seed Organic Chia Seed
- dash Cinnamon (optional)
Instructions
- Place coffee, coconut milk, cocoa powder, maple syrup, vanilla and salt in a blender and mix thoroughly.
- Add chia seeds and blend on low speed for 2 minutes.
- Pour into containers and chill in refrigerator over night.
- Top with raw cacao nibs, fresh blue berries or strawberries or eat it just as is.
