Low Glycemic Chia Seed Nectarine Jelly
This Chia Seed Jelly is an easy and healthy way to spice up your toast, waffles or hot oatmeal.
Ingredients
- 1 Nectarine
- 1/2 Packet Monk Fruit Powder
- 1 Tbsp. Nutiva Organic Chia Seeds Organic Chia Seed
- 8 Tbsp. Water
- 1 pinch Cinnamon
Instructions
- Make chia gel first by mixing the water and chia seeds. Let stand for 5 minutes or more.
- In a blender add one pitted nectarine and monk fruit powder. Add chia gel.
- Blend all together and use like jelly in a sandwich. You can also add on top of toast, waffles or hot oatmeal.
- Keep cool in a small mason jar. Will last 3-5 days.
