Low Glycemic Chia Seed Nectarine Jelly

This Chia Seed Jelly is an easy and healthy way to spice up your toast, waffles or hot oatmeal.

Ingredients

  • 1 Nectarine
  • 1/2 Packet Monk Fruit Powder
  • 1 Tbsp. Nutiva Organic Chia Seeds Organic Chia Seed
  • 8 Tbsp. Water
  • 1 pinch Cinnamon

Instructions

  1. Make chia gel first by mixing the water and chia seeds. Let stand for 5 minutes or more.
  2. In a blender add one pitted nectarine and monk fruit powder. Add chia gel.
  3. Blend all together and use like jelly in a sandwich. You can also add on top of toast, waffles or hot oatmeal.
  4. Keep cool in a small mason jar. Will last 3-5 days.
