Holiday Cookies with Coconut Oil
Ingredients
- 1/2 cup Nutiva Organic Virgin Coconut Oil Organic Virgin Coconut Oil
- 1/2 cup turbinado sugar
- 1 tsp vanilla extract
- 2 eggs beaten
- 1/2 cup sorghum flour
- 1/4 cup brown rice flour
- 1/4 cup Nutiva Organic Coconut Flour Organic Coconut Flour
- 3/4 tsp sea salt
- 1/2 tsp baking soda
Instructions
- Cream together oil and sugar until light and fluffy.
- Add vanilla and eggs, stir to combine. In a separate bowl, mix together flours, salt, and baking soda.
- Add dry ingredients into the wet and gently fold together.
- You can bake immediately, but the cookies set up a bit better if you refrigerate the dough for 10 – 15 min. first.
- Bake at 350 for 7 – 8 minutes.
