Grilled Corn with Coconut Manna and Herbs

The Coconut Manna has a nice creamy consistency and melts onto the corn for a great flavored herb “butter.”

Ingredients

  • 2 Tbsp Nutiva Organic Coconut Manna™ Organic Coconut Manna
  • 1/4 tsp each salt and freshly ground pepper
  • 1 Tbsp finely chopped fresh parsley
  • 1 Tbsp finely chopped fresh basil
  • 1 Tbsp finely chopped fresh chives
  • 6 cobs corn, husks and silk removed
  • Lemon wedges (optional)

Instructions

  1. Stir together Coconut Manna, salt, pepper, parsley, basil and chives. Set aside.
  2. Preheat grill to medium-high heat; grease grate well. Grill corn, turning, for 10 to 12 minutes or until lightly charred and tender.
  3. Serve hot corn with 1 1/2 tsp (7 mL) manna “butter” over top, and lemon wedges (if using).
