Festive Coconut Sugar Cookies with Coconut Icing
Sugar cookies are a classic holiday sweet, but they are generally made with refined sugar, refined flour and chemical-laden food coloring. This dairy-free, gluten-free version, made with unrefined Coconut Sugar, is just as festive as the original but better for you! Make these holiday cookies with your kids or gift them to your neighbors; they are sure to bring smiles.
Ingredients

- ¾ cup Nutiva Organic Shortening Organic Shortening
- ¾ cup Nutiva Organic Coconut Sugar Organic Coconut Sugar
- 2 eggs
- 2 tsp. vanilla extract
- 2 ½ cups almond flour or meal
- ½ cup Nutiva Organic Coconut Flour, sifted Organic Coconut Flour
- ½ tsp. sea salt
- ½ tsp. baking soda
- [b]Frosting[/b]
- 2 cups Nutiva Organic Shortening Organic Shortening
- 2 Tbsp. Nutiva Organic Virgin Coconut Oil Organic Virgin Coconut Oil
- 2 cups powdered sugar
- 2 tsp. vanilla extract
Instructions
- Cookie
- Preheat the oven to 350 degrees.
- In a large bowl, combine the almond flour, coconut flour, sea salt and baking soda. Set aside.
- On medium speed, using a stand up mixer, hand mixer or food processer, combine the shortening and coconut sugar until creamy.
- Add the eggs and vanilla extract.
- Add the dry ingredients and beat until just combined.
- Form the dough into a ball and chill for 30 minutes.
- Place the dough between two layers of parchment paper, dusted with coconut flour, and roll about to about ½ inch thick.
- Use cookie cutters to create desired shapes.
- Place cookies on a parchment lined baking sheet.
- Bake for 12-13 minutes, until golden.
- Let cool before frosting. Makes about 2 dozen cookies.
- Frosting
- Using a stand up mixer, hand mixer or food processer, combine the shortening, coconut oil and powdered sugar until smooth and fluffy (about 2-3 minutes). Add the vanilla extract.
- Add natural (vegetable-based) food coloring, if desired, or leave white.
- Ice cookies using a pastry bag or simply spread with a knife.

WE WERE NOTICING THAT IN YOUR GLUTEN FREE SUGAR COOKIE, THE MEASUREMENT FOR THE COCONUT SUGAR READS, “3/4 NUTIVA ORGANIC COCONUT SUGAR”…….THERE IS NOT AN ACTUAL MEASUREMENT (I.E. CUP, TBLS, ETC). WE ARE ASSUMING IT IS “CUP” AND NOT 3/4 OF A BAG. COULD YOU PLEASE CLARIFY THIS? THANK YOU AND HAVE A WONDERFUL CHRISTMAS AND A HEALTHY AND HAPPY NEW YEAR!!

I’m a vegan. Pretty disappointed that Nutiva gives a coconut-sugar-cookie recipe with eggs. How to make this VEGAN?
Hi, Clarice! We are sorry to hear of your disappointment. Unfortunately, when you use that much Coconut Flour, it is hard to completely replace the egg. Many times, you can substitute the egg for a chia and/or flax egg, but in this case, it will likely not work since the recipe calls for 1/2 c. Coconut Flour. We try to include as many Vegan recipes as possible, but not all our recipes are 100% Vegan, 100% of the time. We hope you understand.
Hello. The title of this recipe states…”With Coconut Icing”. When I look at the recipe for the frosting it calla for “powdered sugar”. I just want to make certain that is correct. Do you mean powdered coconut sugar or the regular one made with granulated white sugar?
