Coconut Shrimp

A delicious coconut shrimp recipe.


  • 2 lbs Shrimp (large)
  • 1 cup Flour
  • 1 tsp (can be substituted with granulated sugar) Organic Coconut Sugar
  • 1/2 tsp Sea Salt
  • 1 Egg (slightly beaten)
  • 1 cup Water (ice cold)
  • 2 tbsp (for frying) Organic Virgin Coconut Oil
  • 1 tsp Curry Powder
  • 2/3 cup Coconut (grated)


  1. Shell and de-vein shrimp leaving tail intact. Pat shrimp dry with paper towel and set aside.
  2. In a bowl, combine flour, sugar, salt, egg, water and 2 tablespoons vegetable oil.
  3. Beat flour mixture until batter is smooth.
  4. Mix together in a separate bowl, combine the coconut and curry powder.
  5. Dip shrimp into batter and then into coconut mixture.
  6. Deep-fry in oil until golden. Makes 4 servings.
