Coconut Pancakes
A tropical twist on a breakfast classic, coconut pancakes are a light and flavorful way to start the day.
Ingredients
- 2 Eggs
- 2+ tbsp - melted; will also be used for cooking Organic Virgin Coconut Oil
- 1 3/4 cups Coconut Milk (can be substituted with whole milk or non-dairy milk of choice)
- 1 tsp Organic Coconut Sugar
- 1/8 tsp Salt
- 1/2 cup - sifted Organic Coconut Flour
- 1/2 cup Gluten-Free All Purpose Flour (can be substituted with all purpose flour)
- 1/4 tsp Baking Powder
Instructions
- In a large bowl, whisk together eggs, coconut oil, milk, sugar and salt.
- In a medium bowl, combine coconut flour, all purpose flour, and baking powder.
- Thoroughly beat flour mixture into egg mixture.
- Heat 1 tbsp of coconut oil in a skillet.
- Spoon batter onto hot skillet making pancakes about 4-5″ in diameter. Batter will be thick but will flatten out while cooking.
- Repeat steps 4 and 5. Makes about 8 pancakes.
- Serve with maple syrup, honey, or fresh fruit & shredded coconut.

I’m guessing that 1/8 tsp Sale should actually say 1/8 tsp salt? Is that a typo or is Sale something I just never heard of before? Thanks!

Can almond flour or more coconut flour be substituted for the all-purpose flour?
Yes, however, the ratios would not be the same. You would need to play with the portions, especially if you choose coconut flour, which requires more egg/liquid typically.
