Coconut Muffins

These cute little coconut muffins are brought to you by Kristen B. Made with delicious organic coconut oil and coconut flour.


  • 1/2 cup Organic Virgin Coconut Oil
  • 1 + 1/4 cup Organic Coconut Flour
  • 11/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 cup coconut milk full fat
  • 1/3 cup coconut nectar raw
  • 1 egg at room temperature is best
  • 1 tsp vanilla extract
  • 3/4 cup coconut unsweetened shredded, divided


  1. Preheat oven to 375°F. Line 10 muffin cups.In a small saucepan, warm coconut oil just until it melts. It should still be on the cool side.In a medium bowl, whisk together your flour, baking powder and salt. Stir in 1/2 cup shredded coconut.
  2. In a separate bowl, whisk together egg, coconut oil, coconut milk, coconut nectar and vanilla.
  3. Stir into dry ingredients until just combined.
  4. Divide batter among prepared muffin cups then sprinkle the top with remaining 1/4 cup coconut, about 1 to 2 teaspoons on each.Bake about 18-20 minutes. Transfer muffins to a rack and let cool.

    Hello! this recipe sounds delicious, but has Me a litle confused. In the ingredients list, I see “» ⅓ cup coconut nectar raw”, but I don’t see it used anywhere in the instructions.
    In the Instructions, Step 2 includes “…whisk together egg, sugar…” but I don’t see sugar in the Ingredients list. Is that supposed to be the “coconut nectar”. If so, can I substitute coconut sugar or raw honey ? Not sure where to get coconut nectar.

    These Coconut Muffins were HORRIBLE. Tasted like a mouth full of sand. The Coconut Blueberry Muffins ( ) are so much better.
