Coconut Banana Chocolate Chip Muffins

These muffins are so delicious and packed with flavor and moisture. As an added bonus they’re also nutritious, gluten-free, and dairy-free! Great for breakfast, snack, birthday or mid-day treats.

Instructions

  1. Preheat oven to 350 degrees.
  2. Sift the coconut flour, baking soda & salt in a bowl.
  3. In a blender or bowl mix the milk, honey, eggs, coconut oil, bananas and vanilla.
  4. Add the chia seeds and blend on low. Let sit for 5-10 minutes.
  5. Pour the wet ingredients into the bowl with dry ingredients and mix well.
  6. Add the chocolate chips or chunks, stir in well.
  7. Spoon the batter into greased cupcake sleeves or tins.
  8. Bake at 350 for 25-30 minutes, until golden brown and cooked through.
  9. Cool on rack and serve.

    4 Tbsp Vanilla sounds like it might be an error? Your coconut blueberry recipe, which is almost identical, only uses 1/4 tsp. vanilla

      I can answer that. 253 calories, 7.5 g of protein, 29.42 g carbs, 5.83 g fiber, 23.59 g net carbs, 25.17 g of sugar 17.25 g of fat, 12.75 which is saturated (Yikes) 92.50 of Cholesterol, 255 mg Sodium, 109 mg of Potassium, 4% vitamin a, 3% vitamin C 5.25 of Calcium and 7.33% iron. I will say this, they are awesomely tasty high fiber muffins, and I did use Ghiradelli semi-sweet chocolate chips. It’s not getting five stars because it’s pretty fattening.

    Each muffin contains 253 calories and 12 grams of saturated fat. They are very good. My guess is if you replaced the coconut oil with another oil, it might reduce the fat.
