Coconut and Pistachio Bundt Cake

This delicious gluten-free Bundt cake has a moist and tender crumb and loads of flavor from the many forms of coconut.

Instructions

  1. Preheat oven to 350°F. Grease 10-cup Bundt cake pan with coconut oil.
  2. In large bowl, sift together almond flour, coconut flour, baking powder, baking soda and salt until blended; set aside.
  3. Using electric mixer, beat egg yolks with sugar until pale; beat in coconut oil, coconut milk and vanilla. Using electric mixer with clean beaters, whip egg whites until stiff peaks form; set aside.
  4. Stir coconut flour mixture into egg yolk mixture. Fold in egg whites; fold in pistachios and shredded coconut. Scrape batter into prepared pan; smooth top (batter will be very thick).
  5. Bake for about 40 minutes or until tester comes out clean when inserted into center of cake. Let cool completely on wire rack; invert onto serving dish.
  6. Coconut and Pistachio Topping: In small saucepan, heat coconut sugar, coconut oil and coconut milk over medium heat for 4 minutes or until sugar melts and mixture is syrupy; drizzle or brush over cake. Sprinkle pistachios and shredded coconut over top of cake.

    Can I replace the 6 eggs with another ingredient or at least use 3 eggs and another ingredient?

      Hi, Leticia! We have not tested it that way, and because the recipe calls for 1/2 c. coconut flour, we would not recommend substituting the eggs for anything else. Hope that helps!
