Coconut and Pistachio Bundt Cake
This delicious gluten-free Bundt cake has a moist and tender crumb and loads of flavor from the many forms of coconut.
Ingredients
- 1 1/2 cups almond flour
- 1/2 cup Organic Coconut Flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 6 eggs, separated
- 1 cup Organic Coconut Sugar
- 1/2 cup melted Organic Virgin Coconut Oil
- 1/2 cup coconut milk
- 2 tsp vanilla
- 1/4 cup chopped pistachios
- 3 Tbsp shredded coconut
- Coconut and Pistachio Topping:
- 1/3 cup Organic Coconut Sugar
- 1 Tbsp Organic Virgin Coconut Oil
- 1 Tbsp coconut milk
- 2 Tbsp chopped pistachios
- 2 Tbsp shredded coconut
Instructions
- Preheat oven to 350°F. Grease 10-cup Bundt cake pan with coconut oil.
- In large bowl, sift together almond flour, coconut flour, baking powder, baking soda and salt until blended; set aside.
- Using electric mixer, beat egg yolks with sugar until pale; beat in coconut oil, coconut milk and vanilla. Using electric mixer with clean beaters, whip egg whites until stiff peaks form; set aside.
- Stir coconut flour mixture into egg yolk mixture. Fold in egg whites; fold in pistachios and shredded coconut. Scrape batter into prepared pan; smooth top (batter will be very thick).
- Bake for about 40 minutes or until tester comes out clean when inserted into center of cake. Let cool completely on wire rack; invert onto serving dish.
- Coconut and Pistachio Topping: In small saucepan, heat coconut sugar, coconut oil and coconut milk over medium heat for 4 minutes or until sugar melts and mixture is syrupy; drizzle or brush over cake. Sprinkle pistachios and shredded coconut over top of cake.

Can I replace the 6 eggs with another ingredient or at least use 3 eggs and another ingredient?
Hi, Leticia! We have not tested it that way, and because the recipe calls for 1/2 c. coconut flour, we would not recommend substituting the eggs for anything else. Hope that helps!
