Yum! Made this for last night’s dinner, although I used my kombucha vinegar so had to add some other seasonings (salt and pepper). For our taste next time I will process in a serrano. Had it on our GF pasta (with green peas and baby tomatoes), froze part of it and will dilute the rest tonight to use as a salad dressing. So glad to find an alternative to pinenuts which have become so costly the past few years. Had been using other nuts but this is the closest to the original. I will also experiment adding in some basil/parsley to the mix and perhaps even a bit of olive oil. Thanks for the recipe.
Hi Deborah – you are so creative! Thank you for sharing with us.
Raw pumpkin seeds work well instead of pine nuts.
