Carob Cocoa Mint Brownies

These vegetarian brownies make for a delicious coconut oil based snack. Give this carob cocoa brownie recipe a try and let us know how you like it!


  • 1 cup Organic Virgin Coconut Oil
  • 4 tbsp Carob Powder
  • 6 tbsp Cacao Powder
  • 1 cup Organic Coconut Sugar
  • 4 Eggs
  • 2 tsp Vanilla Extract
  • 6 drops Spearmint Essential Oil (food grade)
  • 1/2 tsp Sea Salt
  • 1 1/3 cup Flour (Kamut flour works well too)
  • 1 tsp Baking Powder
  • 1/2 cup Pecans or Walnuts (chopped)


  1. Melt coconut oil and carob and cocoa powder in saucepan. Pour into a mixing bowl. Add all other ingredients and mix well.
  2. Grease a 9 x 9 inch baking pan. Pour batter into pan.
  3. Bake on 350 for 25 – 30 min until done in center.
  4. This recipe has the taste of cocoa with the health benefits of carob as well, with the nice aroma of spearmint.
