Carob Cocoa Mint Brownies
These vegetarian brownies make for a delicious coconut oil based snack. Give this carob cocoa brownie recipe a try and let us know how you like it!
Ingredients
- 1 cup Organic Virgin Coconut Oil
- 4 tbsp Carob Powder
- 6 tbsp Cacao Powder
- 1 cup Organic Coconut Sugar
- 4 Eggs
- 2 tsp Vanilla Extract
- 6 drops Spearmint Essential Oil (food grade)
- 1/2 tsp Sea Salt
- 1 1/3 cup Flour (Kamut flour works well too)
- 1 tsp Baking Powder
- 1/2 cup Pecans or Walnuts (chopped)
Instructions
- Melt coconut oil and carob and cocoa powder in saucepan. Pour into a mixing bowl. Add all other ingredients and mix well.
- Grease a 9 x 9 inch baking pan. Pour batter into pan.
- Bake on 350 for 25 – 30 min until done in center.
- This recipe has the taste of cocoa with the health benefits of carob as well, with the nice aroma of spearmint.
