Cabbage Avocado Salad with Hemp and Coriander
Enjoy this delicious cabbage avocado salad, made with organic hemp oil and hempseed.
Ingredients
- 1/4 cup Red and Yellow Peppers, diced
- 6 cups Cabbage (finely shredded; mix of purple and green is acceptable)
- 1 1/2 Avocado (diced)
- 3 tbsp Organic Hempseed Oil
- 1 1/2 tbsp Lemon Juice
- 2 tbsp Red Onion (diced)
- 1/4 cup Organic Shelled Hempseed
- 3 tbsp Coriander Leaves (loose)
- 1/2 tsp Himalayan Salt
Instructions
- In a mixing bowl toss all ingredients together, squeezing as you mix to ‘wilt’ the cabbage and cream the avocado. Serve immediately.
- As a variation, add chopped fresh herbs or your choice of diced vegetables. This dish works equally well if you substitute the cabbage for kale, chard or spinach. Note: Toss right before serving to retain crispness.
