And here’s the quick + easy recipe to make this Garlic “Butter” Smashed Potatoes + Arugula, Apple, Walnut Salad (makes 2 bowls + takes about an hour): . To make the Garlic “Butter” Smashed Potatoes: in a pot, cover 8-10 baby potatoes with water + 1 tsp of salt. Bring water to a boil and cook for about 20 minutes until potatoes are cooked through. In the meantime, preheat your oven to 425F. Once the potatoes are cooked, remove them from the water and place them on a clean towel. Once warm, either use a fork or the towel to gently smash each potato until it’s about 1/2 inch thick. Place all of the potatoes on a baking sheet, slather each with melted @Nutiva Organic Coconut Oil with Butter & Garlic Flavors, pink Himalayan salt. Roast in the oven for about 30 minutes, flipping carefully halfway through. Once crispy, remove them from the oven and cool down. Sprinkle with fresh thyme. . To make the salad: add 4 handfuls of fresh clean arugula to a bowl. Add one thinly sliced apple (I love pink lady apples in this salad) + 1/4 cup of dried cranberries + 1/4 cup of walnuts + a few sprigs of fresh mint. Mix dry ingredients first, then add wet and mix. Fold in the cranberries and transfer to a lined loaf pan and prepare crumble. . Almond flour crumble 2 Tbsp almond flour 3 tsp @nutiva organic coconut oil with butter flavor room temp (not melted) 2 tsp coconut sugar . Mix with your hands until a crumbly consistency, top bread with it, Bake 350 for 45-50 minutes or until toothpick comes out clean.

all i was craving all day was a big bowl of pasta. so, i came home and made a huge skillet of pasta…makes sense, yah? ? whipped this up for the fam using @nutiva’s Organic Coconut Oil with Butter and Garlic Flavors & i’m happy to report that they approved (even Reag ??). recipe & deets below! have a fab night everyone! ✌?#betterholidaybutter#organic#cleaneating#amandafitlife . . garlic chicken & tomato linguine pasta skillet . . ingredients: 1 chicken breast, diced 1 garlic clove, chopped 2 tbsp. chopped yellow onions 5-6 campari tomatoes, chopped 2 tbsp. @nutiva Organic Coconut Oil with Butter and Garlic Flavors 1 serving of gluten free chickpea linguine handful of fresh basil seasonings: sea salt, pepper, garlic powder feta for sprinkling . . directions: melt coconut oil (I used Nutiva Organic Coconut Oil with Butter and Garlic Flavors which is available at walmart!) in cast iron skillet on medium-low heat – season with sea salt, pepper, and garlic powder to your liking. add diced chicken breast and let sauté until golden brown on outside. in the meantime, boil pasta in a small pot. remove chicken from skillet and add diced onion & garlic – sauté until translucent. add chopped campari tomatoes and let cook for 3 to 4 minutes. once pasta is done, strain and run under cold water. add cooked chicken back into skillet, followed by the cooked linguine and mix well. add one chopped basil leaf to the skillet and mix once more. top with feta (and additional basil if you’d like) & enjoy!
