Banana Bread

Banana Bread is great for breakfast, as a healthy snack or even as a simple dessert.

Ingredients

  • 3 cups Almond Flour (blanched)
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1/2 tsp Baking Powder
  • 3 Eggs
  • 2 Bananas (very ripe - mashed)
  • 1/2 cup Xylitol
  • 1/2 cup Organic Virgin Coconut Oil
  • 1 tbsp Vanilla Extract

Instructions

  1. Pre-heat oven to 350° F.
  2. Grease a 12-muffin tin (or 1 loaf pan) with coconut oil.
  3. Mix dry ingredients in a large bowl.
  4. Mix wet ingredients in a medium bowl (in order listed).
  5. Add wet mixture to dry mixture.
  6. Transfer to pan.
  7. Bake in a loaf pan for 35 – 40 minutes. Bake muffins for 20 – 25 minutes.
  8. Let cool in pan for about 5-10 minutes.
  9. Remove from pan and cool on wire rack.

      Hi, Karolyn! Almond flour and Coconut flour are not direct 1-to-1 ratios. Check out these 13 Things To Know About Coconut Flour (https://kitchen.nutiva.com/13-things-to-know-about-coconut-flour/). From there, you could possibly work backward to swap in the Coconut flour for Almond. We have not tested it, though, so we don’t know for sure! Let us know if you do try it and how it works!
