ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 Tbsp white sugar
  • 1/2 cup unsweetened shredded coconut
  • 1 1/2 cups milk
  • 2 eggs
  • 1/2 cup Squeezable Organic Virgin Coconut Oil
  • zest and juice from half an orange
  • 1 tsp vanilla extract
  • 2 Tbsp Organic Chia Seed
  • sliced bananas and shredded coconut, for garnish

instructions

Preheat the waffle iron.


In a large bowl, sift together the dry ingredients: flour, baking powder and soda, salt and sugar. Whisk the coconut into the sifted flour mixture.


In a medium bowl, whisk together the wet ingredients: milk, eggs, coconut oil, orange zest and juice, and vanilla.


Pour the wet ingredients into the flour mixture and whisk to combine, without over-mixing. Stir in the chia seed, if using.


Using a quarter cup measure, scoop the batter into the waffle iron and cook according to manufacturer instructions. (For full size waffles, a half cup measure might work better.)


Top the cooked waffles with sliced banana and shredded coconut, if desired.
