The
Solar Living Institute

Nutiva donates
1 percent of its sales to groups supporting sustainable agriculture. The
efforts of these groups, taken as a whole, may range from GMO labeling
and community gardens to the banning of toxic pesticides or of mutated
gene fragments. This month, we are delighted to honor the Solar Living
Institute.
The Solar
Living Institute (SLI) features a ten-acre permaculture design, including
the world's largest commercial straw-bale building, which houses the Real
Goods retail store. SLI is located ninety-five miles north of San Francisco
on Highway 101, and is open seven days a week. Admission is free. Each
year more than fifteen hundred students participate in workshops on permaculture,
green energy, natural building, and organic gardening.
The majority
of the institute's permaculture garden plantings produce edible or otherwise
useful crops (for example, some are used to maximize energy efficiency).
The Solar
Living Center's garden
follows the Sun's journey through the seasons, with zones planted to represent
the ecosystems of different latitudes. Woodland, Wetland, Grassland,
and Dry zones are represented through plantings that move from North to
South, with water as the collaborative element. The fruit garden, perennial
beds, herbs, and grasses reflect the abundance and fertility of a home-based
garden economy.

The
Coconut Oil Miracle

Coconut
oil is being increasingly recognized as a health-promoting food. One
good sign of this is that Avery Publishing has purchased the rights to The
Healing Miracles of Coconut Oil , which the company is republishing
in September as The Coconut Oil Miracle. The new book will
contain more than fifty delicious coconut recipes.
Author Bruce
Fife does an excellent job explaining the various types of fat and why
coconut oil is nature's ideal all-purpose cooking oil. Included is a
helpful chapter on using coconut oil for hair and skin care.
Recipe
of the Month
Mushrooms
Sautéed in Coconut Oil
Wash and
slice into small pieces several shitake or portabello mushrooms (or use
any other favorite mushroom variety). Warm the pan to a medium high temperature
with several tablespoons of Nutiva's organic extra-virgin Coconut Oil.
Add mushrooms, some dried herbs such as rosemary, basil, or oregano,
and a dash of Celtic sea salt. Maintain heat for three to four minutes
while stirring the mushrooms, but be careful not to burn the oil -- you
may want to reduce the heat a tad once the pan is hot. The mushrooms
will absorb the coconut oil and become a delicious side dish or a perfect
topping for grains, meats, salads, etc.

Salt of
the Earth
Celtic sea
salt is a wonderful, vital, and essential food for the body. What makes
it so magical is that it's one of the few remaining foods that are not
man-made. It's full of minerals that are naturally balanced.
Sea salt
has been harvested by the Celts as a healing and preserving nutrient for
thousands of years. The salt is channeled into clay ponds where the sun
and wind evaporate the water, leaving a mineral-rich brine. Salt farmers
use wooden tools to speed the brine's drying and help the salt crystals
to form.
By contrast,
everyday table salt is washed and boiled. It is then mixed with iodine,
bleaching agents, and anti-caking agents to create a uniformly white,
free-flowing product. Even many "sea salts" found in health
food stores have been washed and boiled, which unfortunately removes minerals
and trace elements.
Sodium is
an essential nutrient, a mineral that the body cannot manufacture itself
and one that's required for life and good health. Human blood contains
0.9% sodium chloride, or salt.
The renowned
nutritionist Dr. Bernard Jensen said, "All cellular structures become
alive through electrolytic activity. Life begins with electrolytes. Trace
minerals carry the life force in our bodies more than any other substance."
Mineral salts
create electrolytes. Electrolytes, which might accurately be called the
spark of life, carry electrical currents throughout our bodies, sending
messages to the cells. Electrolytes are also necessary for enzyme production.
Enzymes are responsible for muscle function, hormone production, the breaking
down of food, the absorption of nutrients, and more.
It's a good
idea to seek out unprocessed Celtic sea salt or other unrefined salts
to incorporate into your daily diet.
